I made these Grilled Chicken Skewers the other night and they were TO DIE FOR! Even our kids loved them — and let me just say that a 2 year old and 7 year old are hard to please 🤷🏼♀️😂 Here’s what ya need:
1 lb Boneless Skinless Chicken Breast cut into 1 inch cubes
1 - 8oz can of pineapple in juice
1 medium red bell pepper (cut in 1 inch cubes)
1 red onion cut in 1 inch chunks
8 bamboo skewers
1/4 low sodium soy sauce
2 tsp sesame oil
2 tsp fresh grated ginger
Here’s what ya do:
1. Soak your skewers for 30 mins before you’re ready to cook
2. Put your chicken, oil, soy sauce, and ginger into a zip lock bag. Mix it up and let it marinate in the fridge for 30 mins!
2. Begin to layer your skewers ➡️ 1 piece of chicken, 1 piece of pineapple, 1 pepper, and 1 onion. Do this until you have 2 pieces of each ingredient on your skewer.
3. Place the skewers on your hot grill - about 10 mins on each side.
I paired mine with a 1/2 cup of brown rice; but this also go well with a steamed veg!! Enjoy 😋
