MELT-IN-THE-MIDDLE CHEESE & SAUSAGE POTATO CAKES. Yay or nay? 😋 I've added both beans and bacon in the centre of my cheesy potato cakes before, so the next logical step was a sausage 😏. In fact, I'd squash a whole full English in them if I could (might actually have to try that next 😍🤔). Anyway, back to the sausage. Recipe is below, hit save if you fancy trying this banger (had to be done 😂).
Recipe (makes 2 large potato cakes):
🧀 Squeeze the meat out of the casing of a sausage and shape into a patty. You can use any type of sausage you like, just use 1 sausage per potato cake. Veggie sausages would also work if you don't eat meat.
🧀 Pan fry the sausage patties on each side until golden & crispy, making sure they are completely cooked through. Set aside on some kitchen paper to absorb any oil.
🧀 Meanwhile, pierce a medium potato with a fork, microwave for 6 minutes then leave to cool slightly before scooping out the flesh.
🧀 Mash the potato with 1/2 tbsp plain flour and any seasonings of your choice. I added a pinch of sea salt, rosemary & sage.
🧀 Separate the mixture into 4 pieces then shape into patties (doing this on a floured board helps).
🧀 Add a sausage patty on top of 2 of the potato patties, then top with 20g grated cheese. Add another potato patty on top, press to seal around the edges, then re-shape with your hands into a round.
🧀 Heat a frying pan with a little oil, then add the potato cakes. Cook on each side for 2-3 mins or until golden brown, then serve & enjoy 😋.
