🍋 LEMON GARLIC BUTTER BAKED SALMON WITH CRISPY POTATOES & ASPARAGUS by; @sara.haven 🍋 @sara.haven . This recipe is great for Sunday or Monday meal prep, as it comes together fast and calls for ingredients you probably already have in your kitchen. . POTATOES: 1) Preheat oven to 400 F. Toss 1 pound quartered yukon gold potatoes in 1 tablespoon olive oil; season with salt and pepper 2) arrange potatoes on a large baking sheet and bake for 15 minutes; remove from oven. SALMON & ASPARAGUS: while the potatoes are roasting, combine 3 tablespoons garlic ghee (or butter) + 2 cloves minced garlic + a splash of lemon juice in a small bowl; microwave for 30 seconds, or until melted. Season salmon and asparagus with sea salt + black pepper. Once the potatoes are removed from the oven, push them to one side of the baking sheet (they’re not finished cooking yet), and arrange salmon and asparagus as seen in the photo. Drizzle with lemon garlic butter sauce. Bake for 10-15 minutes or until salmon is cooked through. Remove from oven and turn it to broil. NOURISH BOWL 🌿 Easy bowls have been key for me these past few weeks. While I do work from home, there's usually so many different things going on in the day that having lunch prepped (at least partially) ahead of time is a huge game changer! 🙌🏼. . While I'm actually not a huuuge fan of salads, nourish bowls are something I can definitely get on board with. I consider nourish bowls to be a mixture of both warm and cold foods that are more than just veggies. Here I have roasted chickpeas, roasted sweet potato, red onion, quick-pickled cabbage, arugula, and my lemon tahini dressing (get the recipe for free in my sauces ebook-link in bio!). The protein (chickeas), fiber (pretty much everything), carbohydrates (sweet potato), and fats (tahini) will keep me full for much longer than just some veggies! What's your go-to nourish bowl combo? ✨

Meatball meal prep. Oats were put into a food processor and pulverised ( used oats instead of flour or bread crumbs). This was added together with 2 eggs and green seasoning. It was cooked in a non stick pan and then placed in the oven for about 20 mins. This got me about 60 meatballs that can be added to salads, meals etc. #mealprep #makingbetterchoices #smallchangesbigresults

Taco Tuesday Bowls!🌮 Meal prep version 👇 Super easy to put together, a perfect way to meal prep and a great way to eat clean. If you aren't meal prepping make an avocado salsa(avo contains healthy fats plus its tasty!) or if you need carbs add in brown rice. I made this for two and we intend on eating our bowls within two days, if you are just making this for one person for the week swap out the lettuce for broccoli and freeze your boxes. 5 serves 1 kg chicken (3 portions of chicken breast) 1 (can black beans, drained and rinsed 1 can corn kernel, drained 2 baby lettuce chopped 2 tsp salt 1 tsp pepper 1 tsp paprika 1/2 tsp chilli powder 2 tsp garlic powder 2 tsp cumin powder 1 tsp onion powder Tomato salsa 2 tbsp chopped fresh parsley or cilantro 1/2 lime 3 tomatoes diced 1/4 white onion diced 1. Poach chicken with 1 tsp salt and pepper (place chicken in pan and pour enough water just to cover the chicken, cook at medium heat for 15 minutes - cover pan with lid during the last 10 minutes) 2. Shred chicken once cooked 3. Add shredded chicken to a pan on high heat with 1/4 cup water and the remaining spices. Cook till slightly dry 4. Make tomato salsa, add black beans, corn, lettuce, chicken and any other add ons. 5. ☀️☀️UNI LUNCH IDEA☀️☀️ . Top of the morning to ya and what a day for it!! . Had this for lunch yesterday and cannot recommend more!!! 🌟Left-over @meatlessfarm meatballs which were the @mobkitchen balsamic recipe (£2.50 for 3-4 portions) 🌟Whole head of Cos lettuce (40p for 2) 🌟Brocoli (75p whole thing) 🌟Sweet potato chips 🍟 (£1 for 2) 🌟Added some @moorishumous (gifted) which my house and I are LOVING. Highly recommend. . Just worked out how much this cost me given I used 1/2 a broc and one sweet pot and cost £1.60. Filled me up, highly nutritious, high in protein (really trying) and not boring. . Hope we likey the lunchboxy ideas (answering the poll)! Just something that worked for me as I am trying hard not to buy lunch! . This weeks dinner prep! Classic Italian Ragu De La Casa! 1kg Pork Mince Beef, 1kg Beef Mince, 100g Pancetta, 10g Porcini, 500g Carrots Diced, 500g Onion, 500g Celery, One head of Garlic Crushed, 2kg Tomatoes, 2L Beef Stock, brown fall off on olive oil. Combine and simmer for 6 hours, then add half a bottle of red wine (in this case a Claymore Wines 2017 Shiraz) and simmer for another two hours. Add 2 tbsp each of oregano, thyme, rosemary and freshly cracked black pepper. Another reason I'm excited to go back to work is MEAL PREPPING!! I absolutely love it. It save me so much time and money! I've been a bit careless with my money over the last few weeks but prepping meals is one way I feel more in control of my finances. On a Saturday I plan exactly what food I'll be eating during the week so when I grocery shop I'm not wasting money on random things. I usually shop the catalogues so my snacks and meals are dependent on what's on special. I like doing it that way because it changes things up for me and I often try new things (like the little bags of corn, edamame and peas!) . . . Anyone else meal prep? 🍓

PORRIDGE to go! Porridge kann man ja so super vorbereiten . Und es schmeckt am nächsten Tag fast noch besser. Ich habe hier Haferflocken nur mit Wasser und Chiasamen angesetzt. Durch die Chiasamen bekommt das Porridge eine ganz tolle Cremigkeit, und ich spare durch das Weglassen von Milch oder Joghurt Kalorien. Die Süße gibt’s bei mir immer durch das Topping. yo. i’m back. not sure how long for, or if i’ll even stay this time. and i bring with me a photo i would never post on my personal accounts 🥴 the last year has been an emotional rollercoaster for me; i’ve had a few health setbacks, and i unfortunately fell in love with someone i shouldn’t have and that had taken the most severe toll on my mental and consequently physical health. my anxiety has gotten so bad that i am constantly experiencing nausea to the point of throwing up and i get overwhelmed at the smallest and randomest of triggers. living a high stress lifestyle meant this relationship became my sole focus for happiness so whenever it shows signs of falling apart, changing, or disappearing, i experience a form of withdrawal symptoms and it’s truly wrecking me because i always blame myself instead of the other person because i don’t see myself as good enough. it’s time to change into a version of myself that i can love because when people leave, the only person you have left sometimes is yourself and it’s not fun spending time with someone you don’t like. i even had a terrible moment last year where a more-than-friend mentioned visiting me from overseas and because of my appearance, i experienced a severe anxiety attack because although my entire heart, soul, and body wanted to see them, my fear and self-hatred wouldn’t allow me to do so. it’s time to stop holding myself back. A tale of before and afters..... today in my Facebook was a fb memory. One I prefer not to remember but always good to keep in mind. Two years ago in the top pics I was hospitalised with malnutrition at 53kgs. I went into emergency they took bloods and told me I was going nowhere. Je ne te demande pas d'être une super écolo (je me comprends quand je le dis) qui garde 1 an de déchet dans un bocal, non non 🙄 mais juste commencer quelque part. Et ce sera chaque jour un défi à essayé de relever. Si, sur les 30 défis tu en a relevé 1 c'est bien, si tu en a relevé plus c'est mieux.
