A cheesecake treat for you this weekend. I bought Audrey’s @pardonyourfrench cookbook a couple of weeks back. It is such a good collection of recipes. This is her Tarte au Fromage Alsacienne (Alsatian Cheesecake). It is made with 11%MF Greek yogurt, so it’s much healthier than the 32% MF cream cheese that I usually make. Overall, that’s only 1/3 the fat, HAVE THAT SECOND SLICE!!!😂😂
It has an excellent texture and a slight tang with the yogurt.
I had to cook it about 15 minutes longer. You know when you see the well in the top that it’s not cooked yet, be patient. Then, just out of the oven, you are supposed to invert it onto a ring cooling rack AND take off the springform pan - WHAT?? Upside down, hot, no support - FEAR!!! You just know it is going
ALL OVER YOUR COUNTER!!

Audrey is in France now (visit her site for awesome pics) where I’m hoping she is diligently researching recipes, like for those scallops posted the other day, for a NEW cookbook!!!(no pressure...😂😂)
